Potato salad with herbs and onions

The perfect salad to break your Iftar with, loved by people of all ages.

INGREDIENTS

  • 2 kg baby new potatoes
  • 30 ml white vinegar
  • 5 spring onions, cut into 5 mm pieces 
  • 100 g flat-leafed parsley, chopped
  • 100 g chervil, chopped
  • 100 g chives, finely chopped
  • 2 tbsp mint, finely chopped
  • 50 ml olive oil
  • Salt pepper as needed

DIRECTIONS

  1. Scrub the potatoes and boil in a large pan of salted water until soft but still firm, then drain and put in a large bowl.
  2. Add the white vinegar and spring onions to the bowl, mix gently and leave to cool.
  3. Just before serving, add the herbs, olive oil, and salt and freshly ground pepper to taste.
