Tamer Hindi

This tamarind drink is highly popular during Ramadan and there's no way you can miss it out this time!

Servings: 8-10


INGREDIENTS

  • 1 ½lb Black tamer hindi
  • 1 lb brown tamer hindi
  • 10 cups sugar
  • 12 cups water
  • 2 juice lemons
  • 1 tsp rosewater (or as needed)

Note: If you can’t find both types of tamarinds, you can use the basic available.


DIRECTIONS

  1. Soak black and brown tamer hindi in 12 cups of water for 10 hours. Stir and crush with hands. 
  2. Now, strain with a cheesecloth.
  3. Add sugar and bring to boil, skimming foam as it appears on the surface. 
  4. Add the lemon juice and let simmer on medium heat for about 30 minutes until syrupy. Add rosewater as well. 
  5. Pour into clean bottles/jug. Wait until cold to seal the bottles.
  6. To serve, add ice cubes.
