INGREDIENTS
- 1 ½lb Black tamer hindi
- 1 lb brown tamer hindi
- 10 cups sugar
- 12 cups water
- 2 juice lemons
- 1 tsp rosewater (or as needed)
Note: If you can’t find both types of tamarinds, you can use the basic available.
DIRECTIONS
- Soak black and brown tamer hindi in 12 cups of water for 10 hours. Stir and crush with hands.
- Now, strain with a cheesecloth.
- Add sugar and bring to boil, skimming foam as it appears on the surface.
- Add the lemon juice and let simmer on medium heat for about 30 minutes until syrupy. Add rosewater as well.
- Pour into clean bottles/jug. Wait until cold to seal the bottles.
- To serve, add ice cubes.
